It's only human nature. When you have many options, you always choose the absolute best even if the other options are really good too. Besides, i (personally) would pick other powers such as Omnificence because not only it can technically rival infinite manipulation but is easier to use in my opinion.

I would say that Infinity is often implied for anyone who picks Meta or Omni powers.

And for others, i would say that they might think Infinity is way too easy or something, some of them like to have stakes when having powers, it makes it feel real.

Ok, so my issue with Infinity Manipulation is that I've kind of ruined powers that operate on a conceptual level for myself by considering the nature of meta-concepts and absolutes as above infinity.

The easiest place this can be seen is with Supernatural Speed Type IV ("Users have infinite speed. They are able to travel any distance in "0" time, perceiving beings with finite speed as complete statues...despite their speed, they're still bound by space and time.") vs Supernatural Speed Type V ("Users have "immeasurable" speed. Their speed cannot be measured as they can move beyond linear time...immeasurable speed is superior to infinite speed, which is defined as movement in zero time...beings that can travel at infinite speeds can go everywhere instantly, whereas beings that can travel at immeasurable speeds can go everywhere and everywhen faster than instantly") and Absolute Speed ("Users have absolute speed which transcends both levels of speed infinitely and absolutely, this is what makes it absolute. Users are beyond to the concepts of speed and the dimensions of time and space themselves"). Immeasurable speed and absolute speeds completely outclass infinite speed by their nature.

Like, having 'infinite defense', 'infinite attack', 'infinite authority', etc means nothing to someone who can come along and alter the concept of infinity, or wield a meta-concept that entails surpassing infinity, and it certainly means nothing to someone wielding an absolute. In this sense, infinite and conceptual abilities no longer hold the same... 'weight' as they used to for me. They don't feel as powerful, even if they would stomp most verses they get put into, just because I've spent a lot more time thinking about powers that, at least in my mind, completely outclass them.

I would go on to also talk about wanting to pick the best powers, but @Abdalla1234 already said that really well.
