That's not how the power works. If a user of enhanced senses goes blind, their senses aren't suddenly no longer enhanced; they don't lose that trait. What would have to happen would be for the attack to remove the power itself, like if I stabbed you and suddenly you lose your power because I damaged it. Power Anchoring only protects you from powers that would alter your own. What you're thinking of is Immutability.

Unless that knife is magic or someone is using space-time powers to negate their powers directly, Power Anchoring does nothing to protect them.
