After becoming a vampire and stealing the Forgotten One's power, Gabriel Belmont/Dracula (Castlevania: Lords of Shadow) became immortal and near invulnerable; only the Vampire Killer can truly kill him.

Capabilities

...with burning at the stake just one of many fatal situations she survived and recovered from. The only way she can die is by transferring the Code to someone else.

Muzan Kibutsuji (Demon Slayer: Kimetsu no Yaiba), due to being the progenitor and most powerful demon, never gets killed by decapitation by any Nichirin weapons, except for sunlight.

Tanjiro Kamado (Demon Slayer: Kimetsu no Yaiba), temporarily became a Demon due to Muzan Kibutsuji transferring all his blood, powers and abilities to him, plus gaining immunity to sunlight, until he gets cured and turned back into a human.

Due to his agelessness, regeneration, and infinite stamina Majin Buu (Dragon Ball series) is nigh-impossible to kill unless every last molecule of his being is vaporized at once by overwhelming force.

Garlic Jr. (Dragon Ball Z) wished for immortality upon the Earth's Dragon Balls, allowing him to never age, never be killed, and causing any injury to heal instantly...

...with the Z-Fighters being forced to trap him in the Dead Zone because they can't kill him.

Future Zamasu (Dragon Ball Super) wished for immortality upon the Super Dragon Balls, allowing him to never age, never be killed, and causing any injury to heal instantly...

...however, due to the contradiction caused by the fusion of the absolutely immortal Zamasu and the mortal Goku Black, Fused Zamasu (Dragon Ball Super) has imperfect immortality allowing his mortal self to be killed with significant injuries...

...and what remained of his immortal self was ultimately erased from existence.

Angels (Dragon Ball Super) are fully immortal as long as they do not break the divine laws they have to obey, but doing so will cause them to be erased...

...as was Merus' fate when he broke the angels' law of non-interference by helping Goku defeat Moro.

After using his Chaos Ball to absorb vast amounts of space-time, Mechikabura (Super Dragon Ball Heroes) became an immortal with infinite regeneration, necessitating him being sealed away since he can't be killed.

Erika Ainsworth/Pandora (Fate/Kaleid Liner Prisma Illya) cannot die because her "death" itself is also within the Pandora's Box, which was never opened in Miyu's World.

Between his regenerative abilities, power to absorb other demons, and possession of the Shikon Jewel, Naraku (Inuyasha) was immortal and near invulnerable, to the extent that he was only destroyed for good when Kagome used the Shikon Jewel to wish him out of existence completely.

After becoming the ultimate life form, Kars (JoJo's Bizarre Adventure Part II: Battle Tendency) cannot age, is immune to such things as sunlight/Ripple, and is virtually unkillable, able to adapt to survive various scenarios...

...though when launched into space, he adapts by becoming an immobile statue who eventually ceases to think, effectively "dying" mentally.

After eating the Chakra Fruit, Kaguya Ōtsutsuki (Naruto) gained immortality and tremendous regenerative abilities in addition to achieving godhood and extremely powerful Jutsu, making her impossible to kill, not even her two sons have the power to kill her, they can only seal her away.

Fräulein Kreutune (Toaru Majutsu no Index) is a mysterious human girl who has existed since the age of witch hunts, an immortal being who has lived for hundreds of years. Fräulein has survived 308 witch trials, including burning, suffocating, imprisonment for months, having been thrown into a lake and even struck by lightning. Fräulein became a legend during her long history and multiple theories spread regarding her origin.

Karin Yuuki (UQ Holder) possesses Immortality Level: S, meaning she is "not permitted to die or get hurt" and will survive virtually anything...

...with only Juuzou Shishimi capable of bypassing her immortality and causing her any lasting harm.

Darkseid (DC Comics) is an immortal multiversal cosmic enity and cannot truly die with only being such as the Great Darkness and the Empty Hand able to cause him harm.

As an avatar of the Green, Swamp Thing (DC Comics) is effectively immortal and can easily reconstruct his body; the only way to kill him is to destroy all plant matter in the universe.

Due to his adaptive ability, Doomsday (DC Comics) is effectively immortal and invulnerable; while he can be killed, he will always return to life, unable to be killed the same way twice.

...with only Noctis, as the True King, being capable of truly killing him.

Due to the curse placed on him, Baldur (God of War) is immortal and invulnerable to all physical and magical threats, except for mistletoe.

Due to all the magic placed on him, Kan-Ra (Killer Instinct 2013) has lived for over 3500 years and survived such things as being sent into space and burned into ash; only his ongoing curse of rot can truly kill him, though he has found numerous means to slow the process down.

As a native of the Spectral Realm and the Elder God's agent, Raziel (Legacy of Kain) is beyond death, merely shifting back into the Spectral Realm if slain in the Material Realm, and reforming if destroyed in the Spectral Realm...

...only dying when he submitted to his fate and became the Soul Reaver.

As bearer of the Triforce of Power, Ganondorf (The Legend of Zelda) is immortal and invulnerable to conventional methods...

...as well as some magical ones...

...with only the Master Sword being capable of harming or killing him; even then, he will eventually resurrect/reincarnate as per Demise's curse.

Others

The Nameless (Anima: Beyond Fantasy) cannot die no matter how much his body or soul its destroyed or damaged, only divine entities can ultimately eradicate him.

Zalgo (Creepypasta) is an abstract entity that will exist as long as chaos exists in minds. Likewise, because it exists beyond the veil, it cannot be separated from reality and therefore must be destroyed before it can be completely erased from the plane in which it manifests. And yet, it can reemerge from its dark dimension, fully revived after the complete destruction of a reality.

Cursed by the gods, Salem (RWBY) is immortal and invulnerable to all mortal and supernatural threats, only able to die by learning and accepting the importance of life and death.

SCP-682 - Hard-To-Destroy Reptile (SCP Foundation) although possessing the ability to adapt to absolutely everything can actually be permanently killed via SCP-2935 - O, Death.
