Due to the his Saiyan heritage, Son Goku (Dragon Ball series) possesses Zenkai, the Saiyans' exclusive genetic trait that allows him to reactively enhance his own strength every time he recovers from a near-fatal injury.
As a Saiyan, Caulifla (Dragon Ball Super) is able to gradually increase her abilities by engaging in combat, slowly adapting to Goku's speed and power and seeing through techniques that initially tricked her as they continue to fight.
Given that Goku Black (Dragon Ball Super) is Zamasu with Goku's body, he is able to enhance himself as he fights by imprinting "battle memories" onto himself...
...which he demonstrates with the real Goku's power and techniques, which not only enhances his overall power...
...but grants him his own variant of the Super Saiyan God Super Saiyan form, Super Saiyan Rosé.
In his battle against Sora, Lexaeus (Kingdom Hearts series) was able to freely increase his power when his health dwindles, adding to his already impressive strength and allowing him to greatly overpower Sora.
Viltrumites (Image Comics) have Smart-Atoms integrated into their physiology which grants the ability to absorb ambient matter & energy to boost a specific attribute passively in that moment. They also become stronger the more the push themselves as well.
